This sandwich came to me in a dream.
Okay, not really. It came to me by staring into my pantry before going grocery shopping and noticing this can of chickpeas that had been sitting there for a few weeks. The wheels started turning and I knew I wanted to mash them with avocado and then it spiraled from there. Goat cheese would be a good addition, right? And a fried egg too because, well, why not?
And it was good. The avocado makes it creamy, the chickpeas give it sustenance, the carrots and fresh spinach bring some crunch, the goat cheese adds some tang, and the fried egg with runny yolk? The cherry on top, you could say. It also comes together pretty quickly! The mashing takes a minute, the frying the egg a few minutes and you can toast the bread while doing all of the above. Layering takes just a moment, unless you want to painstakingly arrange everything perfectly... But I don't have time for that.
What I do have time for? Eating this.
Smashed Chickpea and Avocado Toast
1/2 cup chickpeas, rinsed
1/2 medium avocado
1 tablespoon lemon juice
1 egg, sunny side up
1 ounce goat cheese, crumbled
Handful baby spinach
Handful chopped carrots
1 piece of bread, toasted
Salt & Pepper
In a small bowl, mash together chick peas and avocado. Add in lemon juice and salt and pepper, stirring to combine. Set aside.
In a frying pan, melt 1/2 tablespoon butter or spray with non-stick spray. Cook egg until desired consistency (I love runny yolks). Meanwhile, toast bread.
Assemble sandwich. Layer spinach and carrots on top of bread. Spread chickpea/avocado mixture on top. Sprinkle chunks of goat cheese and top with a fried egg. Sprinkle salt and fresh black pepper over the top.
