Let's do Lunch: Easy Falafel Pita Sandwiches

Today's post is brought to you by laziness.



Unlike my usual fare, this stuff isn't homemade because honestly? Sometimes I don't have time to cook or just don't want to. When that usually happens, I like to have some easy ideas in mind when grocery shopping and it made my whole week so much easier.



You should also know that about 95% of my grocery shopping is done at Trader Joe's. I absolutely love that store, so all my ingredients for today's lunch came from TJ's but you could just as easily buy any other brand or make your own. And no, Trader Joe's has no idea who I am. Below, you can see the exact products I used.



Anyway, I've done some sort of variation of these with different veggies and different "mediterranean spreads" and it's always delicious. The best part? It takes almost no time to come together. If you don't want to be quite as lazy as me, feel free to cut up some fresh veggies to put inside the pitas. I didn't have time for that.



Falafel Sandwiches

makes 3-4 pita sandwiches

4 whole wheat pitas
16 falafel (or ~1 bag frozen falafel)
2 cups tabbouli
2/3 cup tzatziki

Heat/cook falafel according to directions. While heating, lightly warm and toast pitas. Cut pitas in half, stuffing with tabbouli, tzatziki, and falafel.
